BLENDED MUSHROOM TACO BOWL

Ingredients
250gm Beef mince
200gm mixed mushrooms, diced
2 tbsp taco or Mexican seasoning
1 tbsp tomato paste
salt & pepper
2 tsp olive oil, for frying
1/2 cup Basmati rice (per bowl)
1 punnet cherry tomato, halved
1/2 red onion, diced
1/2 lime, juiced
1x tin Corn kernels, rinsed
1/2 Avocado, sliced
1x tin Black beans, rinsed
Optional to add corn chips
Dressing
3 tbsp Greek Yoghurt
1 tsp sriracha sauce
1/2 lime, juiced
1 drizzle olive oil
salt & pepper

Method
Heat the olive oil in a frypan over medium heat and add the minced beef and mushrooms. Allow to cook for a couple of minutes and mix through the seasonings and tomato paste. Stir well and cook for approximately 6-10minutes. Set aside
Chop the tomatoes and toss with diced red onion, lime juice and salt.
To make the dressings simply mix all ingredients together until well combined. Season as desired.
Assemble your taco bowls by adding all the ingredients and topping with corn chips and dressing. Enjoy!
