CRUNCHY PANKO FRIED MUSHROOMS - VEGETERIAN
This amazing vegetarian recipe was created for us by Jordan Theodoros as part of our “Salads and Summer Foods Campaign”.
Ingredients
Mushrooms ( white, portobello, and Swiss browns) sliced
Panko bread crumbs
Mayonnaise to serve
Vegetable Oil to fry
Lemon wedges to serve
250g Dijon mustard
½ bunch lemon thyme leaves picked
3 eggs
8g garlic powder
12g sweet paprika
10g crushed white pepper
Method
1. Combine together the Dijon mustard, thyme, eggs, garlic powder, paprika and pepper.
2. Add the sliced mushrooms then toss in panko crumbs.
3. Fry in hot oil until golden, season with salt and serve with lemon wedges.
