MISO MUSHROOMS
Ingredients
450g white button mushrooms
2 tsp miso paste (red or white)
3 tbsp tamari sauce (or soy sauce)
2 tbsp maple syrup
2 tbsp rice wine vinegar
2 tbsp water
1 tsp cornstarch
Method:
1. In a saucepan, bring mushrooms to the boil until soft (5-6 minutes). Remove from heat and drain. Set aside.
2. In a small bowl, add the miso paste, tamari sauce, maple syrup, rice wine vinegar, and water and mix to combine.
3. In a large fry pan on a medium heat, add in the semi-cooked mushrooms and pour in the miso marinade. Stir to coat all the mushrooms evenly, then add in the cornstarch powder and continue to mix until the sauce thickens. Remove from heat and serve with steamed rice!
